There is nothing quite like slow-cooked pulled pork. Hours in the oven with a smoky spice rub transforms a humble pork shoulder into something extraordinary — tender, juicy, and deeply flavourful. Pile it into soft brioche buns with a sharp crunchy slaw and you have got a meal that disappears in minutes.

Ingredients

  • •t1.5kg pork shoulder

  • •t2 tsp smoked paprika

  • •t1 tsp cumin

  • •t1 tsp garlic powder

  • •t1 tsp onion powder

  • •t1 tsp brown sugar

  • •t1/2 tsp cayenne pepper

  • •tSalt and pepper to taste

  • •t200ml BBQ sauce

  • •t6 brioche buns

  • •t200g coleslaw to serve

Directions

  • Mix all spices together and rub generously all over the pork shoulder. Leave to marinate for at least 1 hour or overnight.
  • Preheat oven to 150C (130C fan). Place pork in a deep roasting tray with 200ml water. Cover tightly with foil.
  • Slow roast for 3.5 to 4 hours until the meat pulls apart easily with two forks.
  • Shred the pork using two forks, discarding any large pieces of fat.
  • Stir through BBQ sauce and return to oven uncovered for 15 minutes.
  • Pile into brioche buns and top with coleslaw. Serve immediately.
